Hans and I are doing a cleanse this month where we are nearly vegan and eating no sugar! I say nearly vegan because we are still finishing off the eggs in the fridge. I had read some interesting materials about how long it takes our body to process meat. Apparently meat is what takes the longest to digest of all foods. Our body cannot digest even the fastest digesting foods until the slow digesting foods have been processed. I still do not understand all of this and I do not think that no meat forever is the way to go BUT I think it is healthy to give our body breaks from hard to digest foods. We are only on the second day but it is hard sometimes! I have noticed that I can eat a LOT more if I want to when I am noting eating the high calorie foods that seem pretty normal to me.
Yesterday for lunch we had a really yummy treat. It was asparagus with cut cherry tomatoes, avocados, and a little bit of vegetable oil baked and lightly grilled after being seasoned with Paprika, salt, and pepper. I did not take a picture but it was really delicious! I knew that Hans would not be filled by this so I added sliced potatoes for him.
The food was delicious and SO yummy. It was filling, delicious and healthy. I did use a little bit of olive oil and peanut oil would have been better but I wasn't going to run to the store when I was already so hungry! Anyways. I hope that this goes well. I'm making a nearly vegan sugar free pumpkin pie for Hans birthday right now. Hans prefers honey to sugar so I am hoping that the delicious smelling pie that is being baked right now will taste as yummy as it smells now.
Our fridge is filled with vegetables, fruits and coconut milk! It is colorful and beautiful but this healthy eating is hard in some ways. I especially miss cheese! ONE MONTH!!! I think this challenge will end positively.
I feel so classed to have a husband who is so willing to support and encourage me in this! I love that he is doing this with me! I know that it is almost valentines day and really a time of year when most consume a lot of sugar but this year even though there is valentines and Hans birthday (In the same day) we are going sugar free! So hard but great! I just feel so weirdly coupley right now! Love my husband!
